It's beginning to look a lot like Christmas!

Tonight was our ward Christmas party at church.  The Mexican casserole theme was hard for my migraine diet, but we made it work.  It really helps that we determined that tomatoes are not a migraine trigger for me.

For our contribution, we made Chicken Mexican Rice.  To make it diet friendly, I substituted shallots for the onions.  Note: you can probably use about half the amount it calls for if you are using a shallot instead of an onion.  Shallots are a lot more potent than an onion, but they still provide wonderful flavor without the same migraine trigger problems.  Definitely food for thought if you are a migraine sufferer.


Mom made a chocolate cake with cream cheese frosting for the dessert table...and I decided to sneak in my Walker's Shortbread Cookies.  Simple.  Yummy.  Migraine friendly.  Needless to say, dessert was covered.

We had a good great time.
